A great tasting Vegan Risotto:

1 yellow(or red if you prefer) onion
1-2 cloves of garlic
200 g mushrooms (I don’t know the English name for Wwedish champinjon, so just make sure it is not a poisonous mushroom!)
3 dl arborio rice
1 tablespoon olive oil
7-8 dl vegetable broth
250 g broccoli
salt and pepper

Fry the onion and garlic, chopped mushrooms and rice in the oil.
Put in a little of the broth at the time, all and all you need to let it boil for about 20 minutes.
The risotto should then be soft and creamy. Chop the brocolli into chunky pieces and put it into the risotto the last 5 minutes. Finished!
