If you are like me, you crave chocolate cake (everyday, anyone?!), but eating wheat, dairy, and processed sugar doesn’t always make you feel great. In fact, I can feel downright ill or exhausted after eating “regular cake”.
Thankfully, I’ve made a few substitute recipes that are super delicious and satisfy my chocolate cravings (without leaving me with that feeling that I’m missing out!), and my recipes are actually GOOD FOR YOU!
Here is my most recent treat (and, it only took five minutes to make):
16 ounces firm tofu (drained)
2 ripe bananas
1 tablespoon vanilla extract
1/2 cup raw cacao
1/4 cup molasses
1/3 cup unsweetened coconut
*maple or agave to taste
*optional: cinnamon, chili powder to taste.
Makes a GREAT mousse or frosting too!
Place all the ingredients in a food processor and blend to combine.
Scrape down the sides of the food processor and blend again to make sure everything is incorporated.
Serve immediately or chill for later!
